MERLOT: Originally from the Bordeaux region, this grape became popular with the producers in California in the ’70s, and popular with the consumers in the ’90s. Initially, Merlot (Young Blackbird” because of its color) was used exclusively for blending. Now it’s a varietal of its own. Softer than the Cabernet grape, it characteristically has lower tannins and a higher sugar level. The flavors include cherry and black currant, and is a wonderful wine to pair with food.
